 Controlled by Mireia Torres, the fifth generation of the family and technical director of Bodega Torres, the Torres' operation in Priorat has helped to expand global awareness about the revival of the region's winemaking fortunes. A blend of Garnacha (Grenache), Cariñena (Carignan) and Syrah grown on the region's fabled black slate "Licorella" soils,  Salmos is a fragrant and ripe red wine that oozes with sweet red fruit and Kirsh-like notes with some dried herbal and floral notes adding complexity. It's appealing confected — glossy was one of my notes, which may or may not strike a chord with you — and richly layered. Some might call it a New World style of wine, meaning it's approachable, smooth and easy to appreciate. (Torres Perpetual is the flagship of its Priorat winery, produced from old vine Grenache and Carignan grown on the family estate vineyards.)
