Winemaker Adam Pearce has crafted a convincing Cabernet Sauvignon that makes the most of the quality and potential of the strong 2012 vintage in Niagara. Low yields at less than two tonnes per acre, hand harvesting and extended time in barrel (more than two years) have resulted in the best red produced to date at the young winery. A wine of serious structure and intensity, this offers a core of ripe plummy fruit with complex cedar, vanilla and exotic spice notes. Made in an elegant, medium- to full-bodied style, this boasts nicely layered flavours and youthful tannins that promise a long life ahead.
