Given Cave Spring’s longstanding reputation for terrific rieslings and chardonnays, you’d be forgiven for overlooking this pinot gris on store shelves. The 2018 vintage of this surprising dry white really captured my attention. I’m happy to report the 2019 follows nicely along the same vein. Produced mostly with grapes grown in the Lincoln Lakeshore sub-appellation, with 11 percent coming from Beamsville Bench, the grapes were allowed to soak for an extended period of skin contact prior to pressing. Afterward, there was a cool and controlled indigenous yeast fermentation in stainless steel tanks to dryness (2 g/L r.s.). The result is medium-bodied, easy to appreciate wine, thanks to its refreshing character, appealing fruit (melon, red apple, lime zest) and texture. Drink now to 2024. 3,000 cases. (89/100)
